CAVE VALCOMBE, 2015 FENDANT DU VALAIS “BLANC D'AMOUR”
The Chasselas (Fendant) grape was first grown in the 18th Century in Valais. In most countries the wine from this grape was used as a table wine. However, in the western part of Switzerland, as it was valued for its freshness, flavour and palatability, it was produced as a quality wine and still is today. The protected appellation 'Fendant' originates from the word "fendre" (melting) and is exclusive to wines made from the Chasselas/Gutedel grape variety from the Valais AOC.
The grapes are lightly pressed and the temperature is controlled at 18 C for the fermentation process. Fermentation continues in stainless steel tanks for 6 months. Pale yellow to light straw color. Intense lime-blossom aroma with light mineral extract notes. Very fruity on the palate, harmonious with an invigorating vitality. It is an excellent aperitif, pairs well with prawns and various seafood dishes, meat, sausage, fish, cheese, fondue and snails.
